A Taste of Abruzzo

CIA Pop-Up at the Wine Spectator Greystone Restaurant, January 21–25, 2015

Join us as we welcome guest chef Viola Marcelli as she takes over the Wine Spectator Greystone Restaurant for an extended weekend to bring “A Taste of Abruzzo” to the Napa Valley.

Off the coast of the Adriatic Sea, Abruzzo is known for its simple, yet hearty meals, as chefs will often use minimal ingredients to create delicious, abundant feasts. Traditional regional cuisine utilizes fresh and available ingredients with fish sourced from the Adriatic Sea and cheese procured from mountain farmers, including Viola’s family.

The Marcelli family’s organic, bio-agritoursim farm, La Porta dei Parchi, strictly adheres to traditional, sustainable farming practices and raises sheep and goats for cheese production. Their Ricotta, Pecorino and Caciocavallo are world-renowned and have won several Slow Food Italy awards, and they are also known for bronze cut pasta and small production honey, olive oil and mostocotto.

“A Taste of Abruzzo” will highlight the family’s influence and explore traditional cuisine from a small mountain community that embodies farm-to-table dining and sustainable farming practices.
