Experience a cool fall night with us as we give back to our communities and celebrate our seasonal bounty. The night will begin with a cocktail reception and silent auction. A four-course meal of fall flavors will follow. Proceeds to benefit:

Reception: Cocktail hour at 6 p.m., dinner begins at 7 p.m.
Location: Farquharson Hall at The Culinary Institute of America, Route 9, 1946 Campus Drive, Hyde Park, NY 12538
Dress Code: Semi-formal
Entertainment: Live jazz and swing music provided by The Lucky 5.
Price: $95 per person, includes the reception, four-course dinner, all beverages, tax, and service. A portion is tax-deductible.

This event is presented by CIA bachelor’s degree students. These future stars in the hospitality industry are responsible for all of the evening’s planning and execution, from menu development to the overall ambiance and design of the event.

Spiral Fall Tart
Potato and fall vegetables with caramelized onion, topped with goat cheese and leeks
Vegetarian, can be dairy-free and gluten-free (buckwheat tart shell)

Third Course

Braised Short Rib “Birria”
Onion and mushroom “torpedo,” celeriac parsnip puree, puffed beef tendon
Can be gluten free and dairy free

Brown butter emulsion, onion & mushroom “torpedo,” celeriac parsnip puree

Dessert

Caramel Bourbon Panna Cotta
